Mango Achar Pickle Recipe

(AAM KA MITHA ACHAR RECIPE )

Ingredients:
675gms  Green Aam (Mangoes)
575gms  Sugar
2tsp salt
1tbsp white cumin seeds
2tsp brown cardamom seeds
1tbsp poppy seeds
1tsp red chili powder

Method:

Wash, peel and grate the  mangoes. There should be about 450gms  of flesh.
Add sugar and salt and mix well in a large bowl.
Roast cumin seeds, cardamom seeds and poppy seeds, stir in chili powder and mix with the sweetened mango.
Turn the mango pickle into a sterilized jar, cover with a clean cloth and leave out in the sun or in warm, light place for about a week. Shake the jar at least once a day.

Indian Style Yogurt Recipe

Ingredients:
Milk  1/2 gallon
Yogurt  1/2 tsp.

Method:
1.  Boil the milk. Let it cool till it warmish.
2.  Add 1/2 tsp. of yogurt. Stir well.
3.  Leave it undisturbed for approx. 8 hours in a warm place.
4.  Check to see if the yogurt is set. If not, leave for couple of hours more. Refrigerate for another 1-2 hours for best results after yogurt sets.

Tamarind Chutney Recipe

Ingredients:
Tamarind  1 cup
Jaggery/Brown sugar  1/2 cup
Sugar  2 tbsp.
Red chili powder   1/2 tsp
Black pepper powder  1/4 tsp.
Cumin powder (roasted)   1 tsp
Cloves   2-3
Warm water  2 cups
Vegetable oil  1 tsp.
Salt to taste

Method:
1.  Remove the seeds from tamarind and soak it in water for 20 to 30 minutes.
2.  Heat oil in a pan and add cloves. Fry for about 30 secs.
3.  After half an hour, take out the pulp from the tamarind and add jaggery/brown sugar, sugar, red chili powder, black pepper powder, roasted cumin powder, cloves and salt.
4.  Cook the tamarind mixture for 5 minutes on medium. Remove from the gas and let it cool.
5.  On cooling, blend the contents in a blender..
6.  Strain and cook until it becomes thick.
